2 -3 Lbs Chuck Roast, Cut into 1" Pieces 1 TSP Salt 1/2 TSP Pepper 1 Stick Butter or 1/2 Cup Lard 2 TBS Paprika, Sweet or Hot or One of Each 1 - 1 1/2 Lb Onion, Thinly Sliced 1 TBS Flour Hot Water or Dry White Wine 2 Cups Sour Cream Melt butter or lard in a large saucepan or dutch oven. Brown meat on all sides. Add onions and stir in paprika. Make sure meat and onions are a brownish/reddish color. Lower heat, add flour and stir for one minute. Cover meat with hot water or wine and stir. Simmer over low heat, covered for 1 - 1 1/2 Hours until meat is tender and onions are cooked down. Add sour cream and combine. Do not boil or cream will curdle. Serve with egg noodles sprinkled with caraway seeds if desired.
