The Story of Spinach Cocktail Bars - Because Brownies don't Always Have to be Chocolate!

We're travelling to 1981 today to celebrate a contribution cookbook from the American Cancer Society! These are actually called "Bars" but they are very much brownie like and with spinach and cheese, they are absolutely delicious! They went fast here in Palm Springs!

Here’s your recipe!
 
2 TBS Butter, Melted
2 Eggs
1/2 Cup Flour
1/2 Cup Milk
1/2 TSP Salt
1/2 TSP Nutmeg
1 TSP Baking Powder
1/2 TSP Garlic Salt
8 Oz Cheddar Cheese, Shredded
2) 10 Oz Pkgs Frozen, Chopped Spinach
1 Heaping TBS Parmesan, Grated
Set oven to 350. Pour melted butter into a 9x13 baking pan. In a large bowl, beat eggs. Add flour, milk, salt, nutmeg, garlic salt and baking powder. Stir to mix thoroughly. Add cheddar cheese. Cook spinach according to package directions, drain well and mix into batter. Mix well. Pour into baking pan. Top with parmesan cheese. Bake 35 minutes, cool 5-10 minutes. Cut into squares.
