2 LB Fresh Spinach, chopped or 2) 10 oz pkg Frozen Chopped Spinach 1 TSP Salt 5 TSP Parsley, Chopped 6 TBS Oil, Olive or Vegetable 6 Eggs, lightly beaten 1/2 TSP Pepper 8 Oz Goat Cheese, Crumbled Set oven to 400. For fresh - mix in salt and let drain 5-10 minutes For frozen - Thaw and drain well. Mix in salt. Add parsley and oil, mix well and spread into a 9x13 greased baking pan or casserole dish around the same size. Mix eggs, pepper and goat cheese well. Make 6 hollow indentations in spinach and divide cheese mixture into each. It's okay if the mixture runs. Bake 30 minutes until set.
