1 Pkg Blueberry Muffin Mix 1/2 Cup Flour 3/4 Cup Milk 1 Egg 1/2 Cup Sugar 1 TSP Cinnamon Canola, Peanut or Vegetable Oil for Frying Drain blueberries and rinse well in cold water. Set aside. Combine muffin mix, flour, milk and egg until moistened. Don't overmix. Gently fold in blueberries. Pour oil into a large skillet abot 1" deep. Heat oil to 365 degrees. Test with a small amount of batter, make sure it fries immediately. Drop mixture by tablespoon into oil. Do not crowd pan. Fry until brown then turn over and fry until brown. Remove and drain on paper towels. Mix sugar and cinnamon in a bag or baking dish. Drop drained donuts in cinnamon sugar mixture and shake to coat. Or, roll in mixture if preferred.
