Curry Dressing:1/2 Cup Mayonnaise1/2 Cup Sour Cream1 TSP Curry Powder1 TSP Lime JuiceDash Salt and PepperSalad:2 Cups Cooked, Diced Chicken Breast1/4 Cup Diced Celery1/2 Cup Fresh Grated Coconut1 TBS Chutney (Major Grey suggested)Mix dressing ingredients together in a small bowl and set aside.In a larger bowl, combine salad ingredients. Add dressing and mix well. Scoop chicken salad into one half of a seeded cantaloupe. This recipe will make enough for 2 cantaloupe halves.Lunch Hack: Not a cantaloupe fan? The chicken salad also makes a wonderful sandwich!
