Chicken Salad Kon Tiki

Curry Dressing:
1/2 Cup Mayonnaise
1/2 Cup Sour Cream
1 TSP Curry Powder
1 TSP Lime Juice
Dash Salt and Pepper
Salad:
2 Cups Cooked, Diced Chicken Breast
1/4 Cup Diced Celery
1/2 Cup Fresh Grated Coconut
1 TBS Chutney (Major Grey suggested)
Mix dressing ingredients together in a small bowl and set aside.
In a larger bowl, combine salad ingredients. Add dressing and mix well. Scoop chicken salad into one half of a seeded cantaloupe. This recipe will make enough for 2 cantaloupe halves.
Lunch Hack: Not a cantaloupe fan? The chicken salad also makes a wonderful sandwich!
