Looking for a fabulous and out of the ordinary side dish that will go great on your holiday table, or any time of year? Look no further! The subtle taste of pineapple will make your main dish so happy!

1 1/4 Cups Raw White Rice 3 TBS Butter 20 Oz Can Crushed Pineapple 1 3/4 Cup Water 1 TSP Salt 1/3 Cup Packed Brown Sugar 2 TSP Lemon Rind, Grated 1/4 TSP Nutmeg (preferably fresh grated) Set oven to 400. Cook rice in butter until golden (watch you don't burn it). Drain 1/4 cup pineapple juice from can, discard remainder to make 2 cups liquid. Once rice is ready add water, pineapple juice and salt. Bring to boil, lower heat to simmer and cover. Cook 15-20 minutes until all liquid is absorbed. Add pineapple, lemon rind and nutmeg. Turn into 1 1/2 quart greased casserole dish.
